Ingredients

  • ¼ tsp salt
  • 1 tsp finely grated lemon zest
  • ½ tsp ground cinnamon
  • 1 tbsp finely ground pistachios, optional

For the Mediterranean finish

  • 2 tbsp finely chopped pistachios
  • 1 tsp lemon zest
  • 1–2 tbsp powdered sugar, for a light dusting
  • Optional: 50 g melted dark chocolate for dipping

Instructions

1. Prepare the baking tray

Preheat your oven to 180°C / 350°F.

Line one or two baking trays with parchment paper.

If you are using a dark-colored baking tray, reduce the oven temperature slightly or keep a close eye on the cookies because the bottoms can brown quickly.


2. Prepare the butter

Place the softened butter in a large mixing bowl.

The butter should be soft enough to press easily with your finger but not melted.

Beat the butter with an electric mixer on medium speed for about 2–3 minutes.

It should become lighter in color and smooth and creamy.

This step is important because properly creamed butter helps give the cookies their delicate, melt-in-your-mouth texture.


3. Add the powdered sugar

Gradually add the powdered sugar while continuing to beat the butter.

Beat for another 2–3 minutes, until the mixture becomes pale, fluffy, and creamy.

Scrape down the sides of the bowl with a spatula as needed.


4. Add the egg and vanilla

Add the egg and vanilla extract.

Beat on low speed until combined, then increase to medium speed for about 30 seconds.

The mixture may look slightly separated at first. That’s perfectly fine.

Add the lemon zest and mix briefly.


5. Prepare the dry ingredients

In a separate bowl, whisk together:

  • All-purpose flour
  • Cornstarch
  • Salt
  • Cinnamon
  • Optional ground pistachios

Mix thoroughly so the cornstarch and seasonings are evenly distributed.


6. Combine the dough

Gradually add the dry ingredients to the butter mixture.

Mix on low speed just until the flour disappears and a soft dough forms.

Do not overmix.

The finished dough should be:

  • Soft
  • Smooth
  • Buttery
  • Easy to pipe
  • Not runny or sticky

If the dough feels too soft, refrigerate it for 10–15 minutes.

If it becomes too firm to pipe, allow it to sit at room temperature for a few minutes.


7. Pipe the cookies

Transfer the dough into a piping bag fitted with a large star-shaped nozzle.

Pipe small swirls, rosettes, or S-shaped cookies onto the prepared baking tray.

Try to keep the cookies approximately the same size so they bake evenly.

Leave about 3–4 cm of space between each cookie.

If you don’t have a piping bag

You can roll the dough into small balls and gently flatten them with a fork.

You can also use a cookie press.


8. Chill the piped cookies

Place the entire baking tray in the refrigerator for 15–20 minutes.

This is an important step.

Chilling the cookies helps the butter firm up, which prevents the piped shapes from spreading too much during baking.

It also helps preserve the beautiful ridges from the star nozzle.


9. Bake

Place the chilled cookies in the preheated oven.

Bake at 180°C / 350°F for 12–15 minutes.

The cookies should remain relatively pale on top.

Look for lightly golden edges and a slightly golden bottom.

Don’t wait until the entire cookie becomes dark golden, because that can make them dry and hard.


10. Cool the cookies

Remove the tray from the oven and let the cookies rest on the baking tray for 5–10 minutes.

They will be delicate when they’re hot.

After they firm up slightly, carefully transfer them to a wire rack.

Allow them to cool completely.

Lemon & Pistachio

Once the cookies have cooled, sprinkle a small amount of finely chopped pistachios and fresh lemon zest over them.

This is my favorite version because the lemon cuts through the richness of the butter and the pistachios add a wonderful Mediterranean touch.

Lightly Dusted

For a simple presentation, sift a small amount of powdered sugar over the cooled cookies.
