  • 450 g (1 lb) ground meat
    Lamb or beef for a Mediterranean flavor, but pork or turkey are optional.

  • ½ tsp black pepper

1. Prepare the Meat Filling

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until soft and translucent—about 5 minutes.
  3. Add minced garlic and cook 1 more minute.
  4. Add the ground meat and cook, breaking it apart with a spatula until fully browned.
  5. Season with:

    • thyme
    • smoked paprika
  6. When the meat is cooked, drain excess liquid.
  7. Add optional sun-dried tomatoes or olives for a deeper Mediterranean flavor.
  8. Let the filling cool completely before mixing with cheese.

2. Make the Cheese Mixture

3. Prepare the Puff Pastry

  1. Sprinkle flour lightly on your work surface.
  2. Roll out the puff pastry into a large rectangle (approx. 12×14 in / 30×35 cm).
  3. Spread the meat-cheese mixture evenly across the surface, leaving a 1-inch border on one long edge to seal.
  4. Add a little extra cheese on top if you want the look from the picture.

4. Roll the Pastry Into a Log

  1. Starting from the long edge opposite the border, roll the pastry tightly toward the empty edge.
  2. Press gently at the end to seal the seam.
  3. Place the roll seam-side down on a cutting board.
  4. Chill for 10–15 minutes for easier slicing.

5. Slice Into Spirals

Use a sharp knife to cut the log into ½-inch (1.25 cm) thick slices.
You should get about 20–24 pinwheels.

6. Bake
