Ingredients

Beef

  • 1 lb (450 g) ground beef or thinly sliced beef steak
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Juice of ½ lemon

Roasted Garlic Feta Sauce

  • 1 whole garlic bulb
  • 1 teaspoon olive oil
  • 1 cup crumbled feta cheese
  • ½ cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or parsley, chopped
  • Black pepper, to taste
  • 2–3 tablespoons water or milk, as needed

Wraps

  • 4 large pita breads or tortillas
  • 1 cup shredded lettuce
  • 1 cucumber, diced
  • 1 tomato, diced
  • ½ red onion, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the top from the garlic bulb, drizzle with 1 teaspoon olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden.
  3. Allow the garlic to cool slightly, then squeeze the roasted cloves from their skins.
  4. Add roasted garlic, feta, Greek yogurt, mayonnaise, lemon juice, herbs, and black pepper to a blender or food processor.
  5. Blend until creamy, adding water or milk gradually until you reach your desired consistency.
  6. Prepare the lettuce, cucumber, tomato, and red onion.
  7. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  8. Add the ground beef or thinly sliced steak.
  9. Season with oregano, paprika, cumin, garlic powder, salt, and black pepper.
  10. Cook until the beef is browned and cooked through.
  11. Add the lemon juice and cook for another 1–2 minutes.
  12. Warm the pita breads or tortillas.
  13. Spread roasted garlic feta sauce over each warm wrap.
  14. Add the cooked beef, lettuce, cucumber, tomato, and red onion.
  15. Add optional olives, fries, extra feta, or herbs.
  16. Fold the bottom and sides inward, roll tightly, and serve immediately.

Recipe Notes

For the best flavor, prepare the roasted garlic feta sauce slightly ahead of time and refrigerate it until serving.

If using steak, slice it thinly against the grain for a more tender bite.

Keep the sauce, vegetables, beef, and pita separate if preparing the recipe in advance to prevent the wraps from becoming soggy.
