
Ingredients:
For the Black Bean Burger:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup cooked quinoa
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Cooking spray
For the Avocado Pesto:
- 1 ripe avocado, peeled and pitted
- 1/4 cup fresh basil leaves
- 1 clove garlic
- 1 tablespoon lemon juice
- 2 tablespoons water
- Salt and pepper, to taste
For Serving:
- Whole wheat burger buns or lettuce leaves
- Tomato slices
- Red onion slices
- Fresh spinach leaves
Instructions:
- Preheat your grill or grill pan over medium heat.
- In a large mixing bowl, mash the black beans with a fork or potato masher until mostly mashed but still some chunks remain.
- Add cooked quinoa, finely chopped red onion, finely chopped bell pepper, minced garlic, ground cumin, chili powder, salt, and pepper to the mashed black beans. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a burger patty.
- Lightly coat the grill or grill pan with cooking spray. Grill the black bean burger patties for 4-5 minutes on each side, or until heated through and grill marks appear.
- While the burgers are grilling, prepare the avocado pesto. In a food processor or blender, combine the ripe avocado, fresh basil leaves, garlic, lemon juice, water, salt, and pepper. Blend until smooth and creamy. Add more water if needed to reach your desired consistency.
- Once the burgers are cooked, remove them from the grill and assemble your burgers. Place each burger patty on a whole wheat burger bun or lettuce leaf, and top with tomato slices, red onion slices, and fresh spinach leaves.
- Spread a generous dollop of avocado pesto on top of each burger.
- Serve the black bean burgers with avocado pesto immediately, and enjoy!
