Low Carb Philly Cheesesteak Egg Rolls
Ingredients:
For the Filling:
- 1 lb thinly sliced beef (such as sirloin or ribeye)
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 4 slices provolone cheese, chopped into small pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Egg Roll Wrappers:
- 8 egg roll wrappers (low-carb or keto-friendly)
For Dipping Sauce (optional):
- Sugar-free ketchup
- Sugar-free mayonnaise
- Sugar-free barbecue sauce
Instructions:
- Prepare the Filling: In a skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the thinly sliced beef and cook until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil. Add the sliced bell pepper and onion. Cook until the vegetables are softened and caramelized, about 5-7 minutes. Season with salt and pepper to taste.
- Return the cooked beef to the skillet with the vegetables. Stir to combine. Turn off the heat and let the mixture cool slightly.
- Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon some of the beef and vegetable mixture onto the center of the wrapper. Top with a few pieces of chopped provolone cheese.
- Fold the bottom corner of the wrapper over the filling, tucking it tightly. Fold in the side corners towards the center, then roll the wrapper tightly away from you, sealing the edges with a bit of water. Repeat with the remaining wrappers and filling.
- Cook the Egg Rolls: Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with cooking spray. Place them in the air fryer basket in a single layer, making sure they are not touching. Cook for 8-10 minutes, or until golden brown and crispy, flipping halfway through cooking.
- Serve: Remove the egg rolls from the air fryer and let them cool slightly. Serve warm with your favorite dipping sauce, if desired.
