Soft and delicious keto chocolate sandwich cookies filled with a sugar-free cream cheese filling.
Ingredients
Soft Keto Chocolate Cookies
- 1/4 cup unsweetened almond milk
- 1/2 tsp vanilla extract
- 4 tbsp melted butter
- 1/3 cup powdered sweetener, such as Swerve Confectioners
- 1/4 cup cocoa powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 2 cups blanched almond flour
Filling
- 3 oz cream cheese
- 5 tbsp heavy cream
- 3 tbsp powdered sweetener, such as Swerve Confectioners

- Preheat the oven to 275 degrees and prepare two baking sheets with parchment paper or silicone baking mats.
- Place the melted butter in a large mixing bowl. Add all the other ingredients (other than the filling). Stir the almond flour in last.
- Form tablespoon-sized balls out of the dough and place them on a baking pan covered with a baking sheet.
- Flatten them by pushing down on each with the flat bottom of a glass or simply with a hand.
- Bake at 275 degrees Fahrenheit for 15-20 minutes or until done. Let them cool for a few minutes on the pan then remove to racks to cool completely.
Filling
- For the filling, place the room temperature cream cheese, heavy cream, and powdered sweetener in a bowl. Use a hand mixer to completely combine the ingredients with no lumps.
- Take one cooled cookie and spread with the filling, then top with a second. Repeat until all are filled.
