  • 2 cups blanched almond flour

  • 5 tbsp heavy cream
  • 3 tbsp powdered sweetener, such as Swerve Confectioners

  3. Form tablespoon-sized balls out of the dough and place them on a baking pan covered with a baking sheet.
  4. Flatten them by pushing down on each with the flat bottom of a glass or simply with a hand.
  5. Bake at 275 degrees Fahrenheit for 15-20 minutes or until done. Let them cool for a few minutes on the pan then remove to racks to cool completely.

Filling

  1. For the filling, place the room temperature cream cheese, heavy cream, and powdered sweetener in a bowl. Use a hand mixer to completely combine the ingredients with no lumps.
  2. Take one cooled cookie and spread with the filling, then top with a second. Repeat until all are filled.
