Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup granulated sugar substitute (such as erythritol or stevia)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
For the Frosting:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar substitute (such as powdered erythritol)
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with non-stick cooking spray.
- In a large mixing bowl, whisk together the almond flour, cocoa powder, granulated sugar substitute, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs with the almond milk, melted coconut oil, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the frosting. In a mixing bowl, beat the softened cream cheese with the powdered sugar substitute, heavy cream, and vanilla extract until smooth and creamy.
- Once the cake is baked, remove it from the oven and let it cool completely in the pan.
- Once the cake has cooled, spread the frosting evenly over the top.
