- 200 grams (7 oz) of spaghetti
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of half a lemon (about 2 tablespoons)
- 1/4 cup sliced olives (green or black, as preferred)
- 1 tablespoon fresh herbs (basil, parsley, or a mix)
- Salt and pepper to taste
Instructions:
- Cook the Spaghetti:
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to the package instructions until al dente.
- Drain the pasta, reserving about 1/2 cup of the pasta water.
- Prepare the Garlic Olive Oil:
- While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over low heat.
- Add the minced garlic and cook slowly, stirring frequently, until the garlic is golden and fragrant (about 3-5 minutes). Be careful not to burn the garlic.
- Combine and Serve:
- Add the cooked spaghetti to the skillet with the garlic oil. Toss to coat the spaghetti in the oil.
- Add the lemon juice and toss again. If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
- Stir in the sliced olives and fresh herbs.
- Season with salt and pepper to taste.
- Serve immediately.
