° 2 tsp grated lemon zest
°1/2 c chopped walnuts, optional
°1 cup fresh or frozen blueberries
+Icing:
°2 tablespoons lemon juice
°1 tablespoon melted butter
°1 cup icing sugar
*How to make Lemon Blueberry Bread:
In a bowl, mix the butter with 1 cup of sugar, the juice and the eggs. Mix flour, baking powder & salt. Add the egg mixture alternately with the milk. Add lemon zest, nuts and berries. Pour the mix into a grease loaf pan. Cooking at 350 is approximately 61-71 minutes.
