Crispy on the outside, tender and savory inside, these Keto Tuna & Corn Fritters make an easy lunch, dinner, or snack. For a lower-carb version, a small amount of corn is paired with coconut flour, eggs, Parmesan, and tuna instead of regular flour or breadcrumbs. A similar low-carb tuna-corn patty uses tuna, corn, eggs, Parmesan, coconut flour, and seasonings.

π Ingredients
- 2 cans (5 oz/142 g each) tuna, drained very well
- Β½ cup sweet corn, drained
- 2 large eggs
- 3 tablespoons coconut flour
- ΒΌ cup grated Parmesan cheese
- 2 tablespoons mayonnaise
- 2 tablespoons finely diced red onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- Β½ teaspoon garlic powder
- Β½ teaspoon dried oregano
- Β½ teaspoon salt, or to taste
- ΒΌ teaspoon black pepper
- ΒΌ teaspoon paprika
- 1β2 tablespoons olive or avocado oil, for frying
Keto note: Corn contains more carbohydrates than most traditional keto vegetables, so keeping the portion modest makes this recipe lower-carb rather than completely carb-free.

1. Drain the tuna
Drain the tuna extremely well.
Press out as much liquid as possible, then flake it with a fork.
This is important: watery tuna will make the fritters difficult to shape and more likely to fall apart.
2. Prepare the corn
Drain the corn thoroughly.
Pat it dry with a paper towel if it is particularly wet.
For a very low-carb version, reduce the corn to ΒΌ cup.
3. Make the mixture
Add the following to a large bowl:
- Tuna
- Corn
- Eggs
- Coconut flour
- Parmesan
- Mayonnaise
- Red onion
- Parsley
- Lemon juice
- Garlic powder
- Oregano
- Paprika
- Salt
- Black pepper
Mix thoroughly until everything is evenly combined.
4. Let it rest
Allow the mixture to sit for 3β5 minutes.
The coconut flour will absorb some moisture and help the mixture become firm enough to shape.
If the mixture still seems too wet, add 1 teaspoon coconut flour at a time.
5. Shape the fritters
Scoop approximately 2β3 tablespoons of mixture into your hands.
Form into a round patty about Β½-inch thick.
Repeat until all the mixture is used.
You should get approximately 8β10 fritters.
6. Heat the pan
Heat 1β2 tablespoons of olive or avocado oil in a large nonstick skillet over medium heat.
The oil should be hot but not smoking.
7. Cook the fritters
Carefully place the patties into the pan, leaving a little space between them.
Cook for approximately 4β5 minutes on the first side.
Don’t move them around too much while they cookβthe bottom needs time to develop a firm golden crust.
8. Flip carefully
Once the underside is deep golden brown and firm, gently flip each fritter with a thin spatula.
Cook the second side for another 3β4 minutes.
They should be crisp and golden on both sides.
Low-carb tuna fritters are commonly cooked over medium-low heat for several minutes per side until golden and cooked through.
9. Drain
Transfer the cooked fritters to a plate lined with paper towels.
Let them rest for 2 minutes before serving.

- 1 tablespoon chopped parsley

You can also make these without pan-frying.
- Preheat air fryer to 375Β°F (190Β°C).

- Continue until golden and crisp.
