  1. Prepare Zucchini Noodles: If using zucchini, spiralize or slice them into noodles. Pat them dry with paper towels to remove excess moisture.
  2. Cook Shrimp: Season the shrimp with salt and pepper. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. Make the Scampi Sauce: In the same skillet, add the remaining tablespoon of olive oil and butter. Add minced garlic and sauté for 1 minute until fragrant. Be careful not to burn the garlic.
