Ingredients

For the Dough:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 2 tablespoons psyllium husk powder (for structure and softness)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered erythritol or other keto-friendly sweetener
  • 4 large eggs
  • 1/4 cup unsweetened almond milk (or coconut milk)

For the Milk Wash (Optional):

  • 1 tablespoon unsweetened almond milk
  • 1 tablespoon melted butter (or coconut oil)

Instructions

  1. Preheat and Prepare the Pan:
    • Preheat the oven to 350°F (175°C).
    • Line a loaf pan with parchment paper, or lightly grease it.
  2. Mix the Dry Ingredients:
    • In a large bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, salt, powdered erythritol, and xanthan gum. Mix well to remove any lumps.
  3. Combine the Wet Ingredients:
    • In another bowl, whisk together the eggs, almond milk, melted butter, and apple cider vinegar until fully blended.
  4. Combine Wet and Dry Mixtures:
    • Gradually add the wet ingredients into the dry mixture, stirring until it forms a dough-like consistency. Let the dough sit for about 5 minutes; this allows the psyllium husk and xanthan gum to absorb moisture and thicken.
  5. Form Dough Balls:
    • Divide the dough into 8-10 equal portions, rolling each one into a ball. These balls will form the “pull-apart” pieces of the bread.
  6. Assemble the Bread:
    • Place the dough balls into the prepared loaf pan in a single layer. The dough balls can be close together but don’t pack them too tightly, as they’ll expand slightly during baking.
  7. Milk Wash:
    • If desired, brush the tops of the dough balls with a mix of almond milk and melted butter to give the bread a soft, golden top.
  8. Bake:
    • Bake for 30-40 minutes, or until the top is golden brown and a toothpick comes out clean. Let it cool in the pan for about 10 minutes before removing.
  9. Serve:
