Keto Peach Cobbler
Ingredients
4 cups fresh or frozen peach slices (without added sugar)
1/4 cup granulated keto sweetener (like erythritol, monk fruit, or allulose)
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg (optional)
1 tbsp lemon juice
1/4 cup water
For the Topping:
1 1/4 cups almond flour
2 tbsp coconut flour
1/4 cup granulated keto sweetener
1 tsp baking powder
1/4 tsp salt
1/4 cup butter (melted)
1 large egg
1/2 tsp vanilla extract
Optional: 1/2 tsp cinnamon for extra flavor

Instructions
- Prepare the Peach Filling:
Preheat your oven to 350°F (175°C).
In a medium saucepan, add the peach slices, sweetener, vanilla extract, cinnamon, nutmeg, lemon juice, and water.
Heat over medium heat until the peaches soften (about 5-7 minutes).
Pour the peach filling into an 8×8-inch baking dish or a similarly sized oven-safe dish. - Prepare the Cobbler Topping:
In a medium bowl, whisk together almond flour, coconut flour, keto sweetener, baking powder, salt, and optional cinnamon.
Add the melted butter, egg, and vanilla extract. Stir until a thick dough forms.
Drop spoonfuls of the dough over the peach filling, spreading it out as evenly as possible. It’s okay if it doesn’t cover everything completely; it will spread slightly while baking.
- Bake the Cobbler:
Bake the cobbler in the preheated oven for 25-30 minutes or until the topping is golden brown and firm to the touch.
Let the cobbler cool for about 10 minutes before serving.
Tips:
You can add a dollop of sugar-free whipped cream or a scoop of keto-friendly ice cream on top for extra indulgence.
If fresh peaches aren’t available, you can use frozen ones as long as they’re unsweetened.
