Ingredients:

  • 1 lb ground beef (80/20 for a bit of fat)
  • 1/3 cup brown erythritol (low-carb sweetener, such as Swerve or Lakanto)
  • 1/4 cup beef broth (make sure it’s low-carb and sugar-free)
  • 1/3 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 tablespoon minced ginger (fresh)
  • 1/4 teaspoon red pepper flakes (optional for a bit of heat)
  • 2-3 packages shirataki noodles or 2 large zucchini, spiralized into noodles (for a lower-carb alternative)
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds (optional for garnish)

Instructions:

  1. Prepare the Noodles:
    • If using shirataki noodles, rinse them thoroughly under cold water, then dry them with a paper towel. Set aside.
    • If using zucchini noodles, spiralize the zucchini and lightly pat dry with paper towels to remove excess moisture. Set aside.
  2. Cook the Ground Beef:
    • In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
    • Add the ground beef and cook until browned, breaking it up into small crumbles with a spoon.
    • Once browned, drain any excess fat from the skillet.
  3. Prepare the Sauce:
    • In a small bowl, whisk together the brown erythritol, beef broth, soy sauce, minced garlic, minced ginger, and red pepper flakes (if using).
  4. Combine and Cook:
    • Pour the sauce into the skillet with the cooked ground beef. Stir to combine.
    • Let it simmer on medium heat for about 5 minutes, allowing the sauce to thicken slightly.
    • Add the shirataki noodles or zucchini noodles to the skillet. Toss to coat the noodles with the sauce and ground beef. Cook for an additional 2-3 minutes, ensuring the noodles are heated through.
  5. Garnish and Serve:
    • Remove from heat and stir in chopped green onions.
    • Sprinkle with sesame seeds if desired.
