Ingredients

  • 2 medium zucchinis, peeled and cut into rounds or sticks about 1/4 inch thick
  • 1/2 cup almond flour
  • 2 large eggs, whisked
  • 1 cup crushed pork rinds (or another low-carb breadcrumb alternative)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)
  • Cooking oil (such as avocado oil or coconut oil)

Instructions

  1. Prepare the Dredging Station:
    • Arrange three shallow dishes.
    • Place the almond flour in the first dish.
    • Whisk the eggs in the second dish.
    • In the third dish, combine crushed pork rinds, salt, pepper, garlic powder, and paprika.
  2. Coat the Zucchini:

    • Dredge each zucchini slice in the almond flour, shaking off any excess.
    • Dip the floured zucchini into the beaten eggs, allowing any excess to drip off.

  3. Heat the Oil:
