Ingredients
- 2 medium zucchinis, peeled and cut into rounds or sticks about 1/4 inch thick

- 2 large eggs, whisked

- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon paprika (optional)

Instructions
- Prepare the Dredging Station:
- Arrange three shallow dishes.
- Place the almond flour in the first dish.
- Whisk the eggs in the second dish.
- In the third dish, combine crushed pork rinds, salt, pepper, garlic powder, and paprika.
- Coat the Zucchini:
- Pat the zucchini slices dry with paper towels.
- Dredge each zucchini slice in the almond flour, shaking off any excess.
- Dip the floured zucchini into the beaten eggs, allowing any excess to drip off.
