Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup psyllium husk powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup sour cream or cream cheese
- 1 teaspoon apple cider vinegar
Instructions:
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
- In a separate bowl, beat the eggs. Add melted butter, sour cream (or cream cheese), and apple cider vinegar. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. Allow the batter to sit for a few minutes to let the psyllium husk powder absorb moisture and thicken the mixture.
- Divide the batter evenly among the muffin cups in the tin, smoothing the tops with a spatula.
- Bake in the preheated oven for 20-25 minutes or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
- Allow the rolls to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
