Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream or cream cheese
  • 1 teaspoon apple cider vinegar

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
  3. In a separate bowl, beat the eggs. Add melted butter, sour cream (or cream cheese), and apple cider vinegar. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. Allow the batter to sit for a few minutes to let the psyllium husk powder absorb moisture and thicken the mixture.
  5. Divide the batter evenly among the muffin cups in the tin, smoothing the tops with a spatula.
  6. Bake in the preheated oven for 20-25 minutes or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the rolls to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
