Keto Crockpot Broccoli Cheese Soup
Ingredients


5 cups fresh broccoli florets, chopped small

2 tbsp unsalted butter, softened

8 oz cream cheese, softened

1 cup heavy cream

2 cups chicken broth, warmed

2 cups water

1/2 cup grated Parmesan cheese

1/4 tsp dried thyme

2 1/2 cups shredded cheddar cheese⦁
Salt and pepper, to taste

Directions


  1. Cut the broccoli into small florets and set aside.

  2. In a large crockpot, whisk together the butter, cream cheese, heavy cream, chicken broth and water until smooth.

  3. Stir in the Parmesan cheese, thyme and broccoli.

  4. Cover and cook on low for 3 hours or on high for 90 minutes, until the broccoli is tender.

  5. Stir in the cheddar cheese until melted and season with salt and pepper to taste.

  6. If you prefer a thinner soup, you can add more water or chicken broth as needed.

  7. Enjoy with some keto bread or crackers if desired.
