Keto Crockpot Broccoli Cheese Soup
Ingredients

5 cups fresh broccoli florets, chopped small

2 tbsp unsalted butter, softened
⦁
8 oz cream cheese, softened
⦁
1 cup heavy cream
⦁
2 cups chicken broth, warmed
⦁
2 cups water
⦁
1/2 cup grated Parmesan cheese
⦁
1/4 tsp dried thyme
⦁
2 1/2 cups shredded cheddar cheese

Directions
Cut the broccoli into small florets and set aside.
In a large crockpot, whisk together the butter, cream cheese, heavy cream, chicken broth and water until smooth.
Stir in the Parmesan cheese, thyme and broccoli.
Cover and cook on low for 3 hours or on high for 90 minutes, until the broccoli is tender.
Stir in the cheddar cheese until melted and season with salt and pepper to taste.
If you prefer a thinner soup, you can add more water or chicken broth as needed.
Enjoy with some keto bread or crackers if desired.
