Instructions:
- In a blender, combine the eggs, softened cream cheese, coconut flour, erythritol (if using), and vanilla extract. Blend until smooth and well combined.
- Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter or coconut oil to grease the pan.
- Pour about 1/4 cup of the batter into the skillet, swirling it around to spread evenly and form a thin layer.
- Cook the crepe for 2-3 minutes, or until the edges start to lift and the bottom is golden brown.
- Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side.
- Transfer the cooked crepe to a plate and repeat the process with the remaining batter, greasing the skillet as needed.
- Serve the keto crepes with your favorite low-carb toppings such as sugar-free syrup, fresh berries, whipped cream, or a drizzle of melted dark chocolate.
