Ingredients:

– 1 1/2 cups full-fat coconut milk

– 3 large egg yolks
– 2 tablespoons coconut flour
– 1 teaspoon vanilla extract
– 1 cup unsweetened shredded coconut
For the topping:
– 1 1/2 cups heavy cream
– 2 tablespoons powdered erythritol or your preferred keto sweetener
– Unsweetened shredded coconut, for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, shredded coconut, powdered sweetener, and salt for the crust. Stir well. Add the melted coconut oil and mix until the mixture resembles wet sand.
- Press the crust mixture into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for about 10-12 minutes, or until golden brown. Remove from the oven and let it cool completely.
- In a saucepan, whisk together the coconut milk, powdered sweetener, egg yolks, and coconut flour for the filling. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens. This should take about 5-7 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract and shredded coconut. Let the filling cool for a few minutes, then pour it into the cooled crust. Smooth the top with a spatula.
- Place the pie in the refrigerator and chill for at least 2 hours, or until set.
- Before serving, prepare the whipped cream topping. In a mixing bowl, combine the heavy cream and powdered sweetener. Whip with an electric mixer until stiff peaks form.
- Spread the whipped cream over the chilled pie. Sprinkle with additional shredded coconut for garnish.
- Slice and serve the Keto Coconut Cream Pie chilled. Enjoy!
