I adjusted the ingredient amounts to reflect the fact that cake has more flour, less sugar, and less leavening than brownies.

Keto Brownie Ingredients
These brownies are flourless and gluten-free since they don’t use ordinary flour and instead use fine almond meal or almond flour (ground almonds).
Dutch cocoa powder, which is commonly used in boxed brownie mixes and will give brownies the most realistic flavor, should be used whenever it is specified. If you can locate it, I strongly advise you to do so.

It should be available in most conventional grocery stores; to identify it, check for the phrase “processed with alkali” on the ingredient list. (The first 1/4 cup of the recipe’s cocoa powder should be regular, unsweetened cocoa powder.)

You can use either ordinary sugar (for non-keto) or granulated erythritol to make the luscious chocolate brownies. Make sure to purchase granulated erythritol rather than powdered when making them keto. Coconut sugar is another option if you want to make paleo brownies.

Although I haven’t tried the recipe with allulose or stevia, feel free to do so if you’d like.

INGREDIENTS

1 tsp pure vanilla extract
1/2 tsp salt
3 tbsp water
2 eggs, or 2 flax eggs
1/3 cup melted coconut oil or butter
2 tbsp dutch cocoa/additional regular
1 tsp baking powder
1/4 cup cocoa powder
2/3 cup granulated erythritol/regular sugar
1 cup fine almond flour
INSTRUCTIONS

Set the oven to 350 degrees. An 8-inch pan should be greased. Mix each component thoroughly. Spread into the pan evenly. If necessary, use a second layer of parchment to smooth down. They will continue to firm up if you let them cool completely after baking for 20 minutes on the centre rack. If you refrigerate very lightly covered for an entire night, they also become much more firm. Whether or not the brownies have icing, they are wonderful.
