Ingredients:
- 2 large ripe bananas, mashed
- 4 large eggs
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas using a fork or potato masher.
- Add the eggs, melted coconut oil or butter, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, and ground cinnamon.
- Add the dry ingredients to the wet ingredients and stir until well combined. If desired, fold in chopped nuts.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
