Ingredients:

  • 2 large ripe bananas, mashed
  • 4 large eggs
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas using a fork or potato masher.
  3. Add the eggs, melted coconut oil or butter, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Add the dry ingredients to the wet ingredients and stir until well combined. If desired, fold in chopped nuts.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
