Keto Au Gratin Yellow Squash and Zucchini

Ingredients
3 medium zucchini, thinly sliced
3 medium yellow squash, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
2 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1/4 cup crushed pork rinds (for topping, optional)
Instructions
Step 1: Prepare the Ingredients
Preheat the oven to 375°F (190°C).
Thinly slice the zucchini and yellow squash. You can use a mandoline slicer for even slices.
Thinly slice the onion and mince the garlic.
Step 2: Sauté the Vegetables

In a large skillet, heat the olive oil and butter over medium heat.
Add the sliced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes, stirring frequently.


Step 3: Layer the Vegetables

In a greased 9×13-inch baking dish, arrange half of the zucchini and yellow squash slices in an even layer.
Sprinkle with a pinch of salt, pepper, and Italian seasoning.
Spread the sautéed onions and garlic over the first layer of squash.
Add the remaining zucchini and yellow squash slices on top.
Step 4: Prepare the Cheese Sauce

In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.
Reduce the heat to low and stir in the mozzarella, Parmesan, and cheddar cheeses until melted and smooth.
Season the sauce with salt, pepper, and red pepper flakes (if using).
Step 5: Assemble and Bake

Pour the cheese sauce evenly over the layered vegetables in the baking dish.
If using, sprinkle crushed pork rinds on top for extra crunch.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.
Step 6: Serve

Let the gratin cool for a few minutes before serving.
Serve as a stand-alone vegetarian entrée or as a side dish with grilled steak, roasted chicken, a fresh green salad, or tomato basil soup.
