Ingredients:

3 cups sugar-free mini marshmallows (sweetened with a keto-friendly sweetener)
Directions:

In a microwave-safe bowl or on the stovetop over low heat, melt the unsalted butter and sugar-free butterscotch chips together. If using the microwave, heat in 30-second intervals, stirring in between, until the mixture is smooth and fully combined. If using the stovetop, stir constantly until melted and smooth.

Once the butter and butterscotch chips have melted together, remove from heat or the microwave. Stir in the natural peanut butter until the mixture is well blended.

Allow the mixture to cool for a few minutes to avoid melting the sugar-free marshmallows when you add them.

Stir in the sugar-free mini marshmallows until they are evenly distributed throughout the mixture.

Line an 8×8-inch pan with parchment paper, leaving some overhang on the sides for easy removal.

Pour the mixture into the prepared pan, spreading it evenly.

Refrigerate for at least 1-2 hours, or until the mixture has set.

Once set, use the parchment paper overhang to lift the mixture out of the pan. Place it on a cutting board and cut it into squares.
