Frozen yogurt bars
Ingredients:
- 2 cups non-fat Greek yogurt (like Fage Total 0%)
- 1 cup strawberries, diced
- 1 cup blueberries
- 1/4 cup low-fat granola (choose a lower-sugar option)
- 1-2 tsp honey or a sugar-free sweetener (optional)
Instructions:
- Prepare the Yogurt Mixture:
- In a large mixing bowl, combine the non-fat Greek yogurt with honey or a sugar-free sweetener if desired. Mix until well incorporated and sweetened to your liking.
- Add the Berries:
- Gently fold in the diced strawberries and blueberries into the yogurt mixture. Be careful not to overmix to maintain the vibrant colors of the berries.
- Line the Pan:
- Line a square or rectangular baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
- Layer the Mixture:
- Pour the yogurt and berry mixture into the prepared baking dish, spreading it evenly.
- Sprinkle the low-fat granola evenly over the top.
- Freeze:
- Place the baking dish in the freezer and freeze for at least 4 hours or until the yogurt is firm.
- Break into Pieces:
- Once frozen, lift the parchment paper to remove the yogurt bark from the dish.
- Break or chop the bark into pieces of your desired size.
- Store:
- Store the yogurt bark pieces in a Ziplock bag or any airtight container in the freezer.
Tips:
- Sweetener: Adjust the sweetness to your liking with honey or a sugar-free sweetener. You can also skip the sweetener if the fruit is naturally sweet enough.
- Granola: Choose a low-fat, low-sugar granola to keep the points low. You can also make your own granola using oats, a bit of honey, and nuts.
- Portion Control: Break the bark into portion-controlled pieces to manage points more easily.
Benefits:
- High Protein: Non-fat Greek yogurt is rich in protein, which helps keep you full longer.
- Low in Fat: This recipe uses non-fat yogurt and low-fat granola, making it a lighter option.
- Fiber-Rich: Berries add fiber, vitamins, and antioxidants, contributing to overall health.
