These homemade egg rolls are packed with juicy seasoned ground beef, tender glass noodles, crunchy carrots, cabbage, and fresh vegetables, all wrapped in a thin shell and fried until beautifully golden and blistered.

1. Prepare the glass noodles.
Place the glass noodles in a bowl and cover them with hot water according to the package directions, usually about 5–7 minutes. Once softened, drain them thoroughly and cut them into shorter pieces with kitchen scissors. Set aside.
2. Prepare the vegetables.
Shred the cabbage, grate or julienne the carrot, finely chop the onion, mince the garlic, grate the ginger, and slice the green onions. Keeping the vegetables relatively small makes the egg rolls easier to roll and prevents them from tearing.
3. Brown the beef.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it into small pieces as it cooks. Continue until the beef is browned and cooked through.
4. Add the aromatics.

7. Add the noodles.
Add the prepared glass noodles and green onions. Toss everything together for 1–2 minutes.
8. Thicken slightly.
Mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry. Add only enough to lightly bind the filling. Cook for about 30–60 seconds, stirring constantly.
9. Cool the filling completely.
