2 tsp lemon zest
2 tsp vanilla extract
¼ cup honey or sugar-free maple syrup (adjust to taste)
1 packet (0.25 oz/7g) unflavored gelatin
3 tbsp cold water
Layers
40ā45 vanilla wafer cookies (or high-protein vanilla cookies)
½ cup milk (for lightly dipping cookies, optional)
Topping
1 cup fresh blueberries
¼ cup white chocolate curls (optional)
Fresh mint leaves
Extra lemon zest
Instructions
Step 1: Prepare the Blueberries
If using frozen blueberries, thaw and drain excess liquid. Reserve a handful of whole berries for garnish.
Step 2: Bloom the Gelatin
Mix gelatin with cold water and let stand for 5 minutes. Microwave for 10ā15 seconds until dissolved.
Step 3: Blend the Filling
In a blender combine:
Cottage cheese
Cream cheese
Greek yogurt
Vanilla protein powder
Blueberries
Honey
Lemon juice
Lemon zest

Blend until completely smooth.
Step 4: Add Gelatin
