  • 1 packet (0.3 oz / 8g) sugar-free gelatin
    • Vanilla flavor or chocolate flavor
  • 2 tbsp powdered sweetener (erythritol, monk fruit, or stevia — diabetic-safe)
  • 1 tsp vanilla extract
  • Pinch of salt

For Chocolate Version (optional)

  • 2 tbsp unsweetened cocoa powder

🍨 Instructions

Step 1 — Whip the Cream

  1. In a chilled mixing bowl, add the heavy cream.
  2. Beat using a hand mixer on medium-high speed for 3–4 minutes, until stiff peaks form.
  3. Set aside.

Step 2 — Prepare the Gelatin

  1. In a separate small bowl, add 3 tbsp warm water.
  2. Sprinkle the sugar-free gelatin over the water.
  3. Let it sit for 1 minute to bloom.
  4. Microwave for 10 seconds to dissolve completely.
    • (Do NOT boil.)

Step 3 — Make the Mousse Base

  1. In a clean medium bowl, whisk together:
    • Greek yogurt
    • Sweetener
    • Vanilla extract
    • Pinch of salt
  2. Pour the dissolved gelatin into the yogurt mixture and whisk quickly so it blends smoothly.

Step 4 — Add Chocolate (Optional)

If making chocolate mousse:

  • Add 2 tbsp unsweetened cocoa powder to the yogurt mixture and whisk until smooth.

Step 5 — Fold in the Whipped Cream

  1. Add the whipped cream to the yogurt-gelatin mixture in 3 batches.
  2. Fold gently using a rubber spatula — do not stir aggressively.
  3. Continue folding until the mixture becomes light, creamy, and airy.

Step 6 — Chill & Serve

  1. Spoon mousse into 4 small serving glasses or ramekins.
  2. Refrigerate at least 1 hour to set.
  3. Garnish with berries, mint, or shaved dark chocolate if desired.
