Ingredients:
- 2 pounds chicken breasts
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 1 (1 ounce) package taco seasoning
- 1 cup enchilada sauce
- 1 cup salsa
Instructions:
- Prepare the Slow Cooker:
- Spray the bottom of a slow cooker with cooking oil to prevent sticking.
- Add Ingredients:
- Place the chicken breasts in the slow cooker.
- Add the chopped onion and minced garlic on top of the chicken.
- Sprinkle the taco seasoning over the chicken and vegetables.
- Pour the enchilada sauce and salsa over the chicken mixture.
- Cook:
- Place the lid on the slow cooker.
- Cook on low for up to 8 hours, or on high for 4 hours.
- Shred the Chicken:
- Once the chicken is cooked through and tender, remove it from the slow cooker.
- Shred the chicken using two forks.
- Combine and Serve:
- Return the shredded chicken to the slow cooker and stir to combine with the sauce.
- Allow the chicken to heat through for a few more minutes.
- Optional: Top with shredded cheese, green onions, jalapenos, or diced tomatoes if desired.
Serving Suggestions:
- Serve the salsa chicken over rice, in tortillas for tacos or burritos, or over a salad.
- It can also be used as a filling for enchiladas or quesadillas.

Crock Pot Salsa Chicken
Ingredients
2 pounds chicken breast
1 cup onion, chopped
2 minced garlic cloves
1 (1 ounce) package taco seasoning
1 cup enchilada sauce
1 cup salsa
Instructions
Spray the bottom of a slow cooker with cooking oil. Place the chicken, onion, garlic, taco seasoning, enchilada sauce and salsa in a slow cooker. Place the lid on the slow cooker and cook on low for up to 8 hours, or high for 4 hours.
When cooked through, remove the chicken from the slow cooker and shred. Add back to the slow cooker and toss to coat. Top with shredded cheese, green onions, jalapenos or tomatoes if desired
