
Crispy Vegan Fried Lentil Patties
These protein-packed lentil patties are crispy on the outside and tender on the inside, making them perfect as a main dish, appetizer, or even a hearty snack. Paired with a creamy dipping sauce, they’re sure to become a staple in your plant-based kitchen!
Ingredients:
- 1 cup dried red lentils (or 2 ½ cups cooked lentils)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 small red bell pepper, finely diced
- 1 carrot, grated
- 1/4 cup chopped fresh parsley or cilantro
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1 tbsp ground flaxseed + 3 tbsp water (flax egg)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional, for heat)
- Salt and pepper to taste
- 2-3 tbsp olive oil for frying
Creamy Dipping Sauce:
- 1/2 cup vegan mayo or plain plant-based yogurt
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt, pepper, and chopped parsley to garnish
Instructions:
- Prepare the Lentils: Rinse the lentils thoroughly, then cook them in 2 cups of water until tender (about 15 minutes). Drain any excess water and let cool slightly.
- Mix the Ingredients: In a large bowl, combine cooked lentils, onion, garlic, bell pepper, carrot, parsley, breadcrumbs, flax egg, and spices. Mix well until the mixture holds together. If it’s too wet, add more breadcrumbs.
- Form the Patties: Using your hands, shape the mixture into small patties. You should get about 8-10 patties.
- Fry: Heat olive oil in a large skillet over medium heat. Fry the patties for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Prepare the Sauce: In a small bowl, whisk together the vegan mayo (or yogurt), lemon juice, Dijon mustard, garlic, salt, and pepper. Garnish with chopped parsley.
- Serve: Serve the patties warm with the creamy dipping sauce.
