Crispy Vegan Fried Lentil Patties

These protein-packed lentil patties are crispy on the outside and tender on the inside, making them perfect as a main dish, appetizer, or even a hearty snack. Paired with a creamy dipping sauce, they’re sure to become a staple in your plant-based kitchen!

Ingredients:

  • 1 cup dried red lentils (or 2 ½ cups cooked lentils)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small red bell pepper, finely diced
  • 1 carrot, grated
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 tbsp ground flaxseed + 3 tbsp water (flax egg)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional, for heat)
  • Salt and pepper to taste
  • 2-3 tbsp olive oil for frying

Creamy Dipping Sauce:

  • 1/2 cup vegan mayo or plain plant-based yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt, pepper, and chopped parsley to garnish

Instructions:

  1. Prepare the Lentils: Rinse the lentils thoroughly, then cook them in 2 cups of water until tender (about 15 minutes). Drain any excess water and let cool slightly.
  2. Mix the Ingredients: In a large bowl, combine cooked lentils, onion, garlic, bell pepper, carrot, parsley, breadcrumbs, flax egg, and spices. Mix well until the mixture holds together. If it’s too wet, add more breadcrumbs.
  3. Form the Patties: Using your hands, shape the mixture into small patties. You should get about 8-10 patties.
  4. Fry: Heat olive oil in a large skillet over medium heat. Fry the patties for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  5. Prepare the Sauce: In a small bowl, whisk together the vegan mayo (or yogurt), lemon juice, Dijon mustard, garlic, salt, and pepper. Garnish with chopped parsley.
  6. Serve: Serve the patties warm with the creamy dipping sauce.
