- 4 large russet or Yukon gold potatoes
- 3 tbsp extra virgin olive oil
- Β½ cup finely grated Parmesan cheese
- 1 tbsp semolina (optional, for extra crispiness)

- 1 tsp dried oregano
- Β½ tsp dried thyme
- Β½ tsp paprika

π Instructions
1. Prepare the Potatoes
Peel the potatoes (optional) and cut them into thick sticks β about Β½ inch wide. Place them in a bowl of cold water and let soak for 30 minutes to remove excess starch (this ensures maximum crispiness).
Drain the potatoes and pat them completely dry with paper towels.
2. Preheat the Oven
Set your oven to 425Β°F (220Β°C).
Line a large baking sheet with parchment paper or lightly grease it with olive oil.
3. Season the Fries
In a large mixing bowl, toss the dried potato sticks with olive oil, garlic powder, onion powder, oregano, thyme, paprika, salt, and pepper until evenly coated.
Sprinkle the grated Parmesan cheese (and semolina, if using) over the potatoes and toss again to create a light, cheesy coating.
4. Bake
