Yield: 6 stuffed fritters

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Ingredients
Zucchini Fritter Batter
3 medium zucchini, grated
4 large eggs
1 cup shredded low-moisture mozzarella cheese
½ cup grated Parmesan cheese
1 cup unflavored whey protein isolate (or egg white protein powder)
2 tablespoons psyllium husk powder
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon black pepper

Cheesy Filling
1½ cups shredded whole milk mozzarella
2 tablespoons fresh dill, finely chopped
2 tablespoons chopped parsley
For Frying
2 tablespoons avocado oil
1 tablespoon butter (optional for extra flavor)

Garnish
Fresh dill
Chopped parsley
Sour cream or Greek yogurt (optional)
Instructions
Step 1: Prepare the Zucchini

Grate the zucchini using the large holes of a box grater.

Sprinkle lightly with salt and let sit for 10 minutes.

Wrap the zucchini in a clean kitchen towel and squeeze out as much liquid as possible. This step is essential for achieving the crispy texture shown in the picture.

Step 2: Make the Batter

In a large mixing bowl, combine:

Squeezed zucchini
Eggs
1 cup shredded mozzarella
Parmesan cheese
Whey protein isolate
Psyllium husk
Garlic
Onion powder
Garlic powder
Salt
Pepper

Mix until a thick batter forms.

If the batter seems too wet, let it rest for 5 minutes to allow the psyllium husk to absorb moisture.

Step 3: Prepare the Filling

In a separate bowl, mix together:

1½ cups shredded mozzarella
Fresh dill
Chopped parsley
Step 4: Form the Stuffed Fritters

Divide the zucchini mixture into 12 equal portions.

Flatten one portion into a small patty.

Place about 2 tablespoons of the mozzarella and dill filling in the center.

Cover with another flattened portion and seal the edges completely.

Repeat until you have 6 stuffed fritters, similar to the ones shown in the picture.

Step 5: Cook

Heat the avocado oil and butter in a large non-stick skillet over medium heat.

Cook the fritters for 4–5 minutes per side, until deeply golden brown and crisp.

Reduce the heat if they brown too quickly to ensure the center heats through and the cheese melts completely.

Step 6: Serve

Transfer the fritters to a paper towel-lined plate for 1 minute.

Serve hot with sour cream or Greek yogurt, garnished with fresh dill.

Freezer: Freeze cooked fritters for up to 2 months. Reheat in a skillet or air fryer until hot and crispy.

Tips to Match the Picture
Squeeze all excess moisture from the zucchini to help the fritters brown evenly.
Use low-moisture mozzarella in the filling to create a gooey center without excess liquid.
Finely chop the fresh dill so it distributes evenly through the cheese filling.
Cook over medium heat to develop the rich golden crust shown in the picture while allowing the cheese to melt completely.
Let the fritters rest for 2–3 minutes before serving so the melted cheese sets slightly while still remaining stretchy when opened.
