Ingredients:
- 1 cup dark chocolate chips (vegan)
- 1 cup mixed nuts (almonds, cashews, walnuts, etc.)
- 1/2 cup dried fruit (raisins, cranberries, etc.) – optional
- 1/2 teaspoon vanilla extract
- A pinch of sea salt
Instructions:
- Prepare Baking Sheet:
- Line a baking sheet with parchment paper or a silicone baking mat.
- Melt Chocolate:
- In a heatproof bowl, melt the dark chocolate chips using a double boiler or microwave in 20-second intervals, stirring in between until fully melted.
- Add Nuts and Fruit:
- Once the chocolate is melted, add the mixed nuts and dried fruit (if using) to the bowl. Stir well to ensure all nuts and fruit are coated in chocolate.
- Create Clusters:
- Using a spoon, drop small clusters of the chocolate-nut mixture onto the prepared baking sheet. Try to keep a rough cluster shape, and make them as large or small as you prefer.
- Set:
- Sprinkle a pinch of sea salt over each cluster while the chocolate is still wet. This enhances the flavor.
- Chill:
- Place the baking sheet in the refrigerator or freezer to allow the clusters to set. This will take about 30 minutes to 1 hour.
- Serve:
- Once the chocolate has fully set, remove the clusters from the fridge or freezer. If needed, reshape them slightly. Serve and enjoy!
