Essential Equipment: Elevating Your Culinary Arsenal:

To ensure the perfect execution of this recipe, gather the following essential equipment:

  • Avocado oil spray for a light and flavorful coating
  • Cooking spray to prevent sticking
  • Air fryer, the modern kitchen marvel that brings a crisp perfection to your creations

Ingredients: Crafting the Perfect Pocket Symphony:

For the Dough:

  • Skinny Pizza Dough, either pre-made or freshly crafted

For the Fillings:

  • 4 ounces Cooked/Seasoned chicken breast or rotisserie chicken breast, finely chopped
  • 3/4 Cup Cooked broccoli, finely chopped
  • 1/3 Cup Kraft fat-free cheddar cheese
  • 20 grams Kraft fat-free mozzarella cheese

For Garnish:

  • Avocado oil spray for a golden finish
  • Garlic salt to taste, enhancing the overall flavor profile

Instructions: A Culinary Ballet Unveiled:

  1. Begin by preparing the Skinny Pizza Dough, setting it aside until ready to use. This versatile dough serves as the canvas for our flavorful masterpiece.
  2. If opting for seasoned chicken breast, preheat the oven to 350 degrees. Season the chicken breast with a delightful blend of salt, pepper, garlic powder, onion powder, paprika, and your preferred spices. Cook until the internal temperature reaches 165°F, allowing it to rest for at least 10 minutes before chopping.
  3. Weigh out two 3-ounce portions of the dough, ensuring a balanced distribution of ingredients.
  4. Lightly coat the cutting board with flour to prevent the dough from sticking. Using a mini pizza roller, delicately roll out both dough balls into large round discs, creating the foundation for your pockets.
  5. On one half of both discs, layer half of the cheddar and mozzarella cheeses, followed by the seasoned chicken and chopped broccoli. Sprinkle the remaining cheese on top of the fillings.
  6. Gently fold the other half of the discs over the fillings, creating a half-circle. Secure the seams by pressing them together with a floured fork, ensuring a perfectly sealed pocket.
  7. Set the air fryer to 350 degrees, and once the pockets are sealed, lightly spray the tops with avocado oil and sprinkle with garlic salt.
  8. Spray the bottom of the air fryer basket with cooking spray and place both pockets into the basket. Cook until they achieve a golden brown perfection, flipping halfway through for an even finish.
  9. Your Chicken, Broccoli, and Cheese Pockets are now ready to be enjoyed!
