Ingredients:

  • 1 large cucumber, sliced into rounds
  • 4 oz cream cheese, softened
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tbsp sour cream (or Greek yogurt for extra protein)
  • 4 slices crispy bacon, crumbled
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 tbsp chopped fresh chives (optional, for garnish)

Instructions:

1️⃣ Prepare the Cucumbers:

  • Slice the cucumber into 1/2-inch thick rounds.
  • If desired, scoop out a small portion from the center for more filling space.

2️⃣ Make the Cheese Filling:

  • In a bowl, mix cream cheese, shredded cheddar, sour cream, garlic powder, smoked paprika, salt, and pepper until smooth.

3️⃣ Assemble the Bites:

  • Spoon or pipe the cheese mixture onto each cucumber round.
