Ingredients:-

  • 1 medium head cauliflower, cut into florets
  • 4 oz. cream cheese, softened
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 oz. pork roll or Canadian bacon, diced
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese (optional)
  • Chopped parsley for garnish (optional)

Instructions:-

  1. Prepare the Cauliflower:
    • Preheat your oven to 375°F (190°C).
    • Steam or boil the cauliflower florets until they are tender but still slightly firm. Drain and set aside.
  2. Make the Cheese Sauce:
    • In a saucepan over medium heat, melt the butter.
    • Add the diced pork roll or Canadian bacon and cook until it starts to crisp up.
    • Reduce the heat to low and stir in the cream cheese until it’s melted and smooth.
    • Slowly pour in the heavy cream while stirring continuously.
    • Add the shredded cheddar cheese gradually, stirring until it’s completely melted and the sauce is smooth.
    • Season the cheese sauce with garlic powder, salt, and pepper to taste.
  3. Combine Cauliflower and Cheese Sauce:
    • In a baking dish, mix the cooked cauliflower with the cheese sauce until the cauliflower is well coated.
  4. Bake:
    • Sprinkle grated Parmesan cheese (if using) over the cauliflower mixture.
    • Bake in the preheated oven for 15-20 minutes or until the top is bubbly and slightly golden.
  5. Serve:
    • Once done, remove the Cauliflower Mac & Cheese from the oven and let it cool for a few minutes.
