Ingredients

  • 1 poundmushrooms, quartered
  • 1 teaspoonsea salt
  • 2 tablespoonunsalted butter
  • 1 cupheavy cream
  • 2 tablespoonsoy sauce or tamari
  • 1 tablespoonfresh thyme

Method

  1. In a dry skillet over medium heat add the quartered mushrooms in a single layer (this might take a few batches…don’t over crowd the pan). Once mushrooms have started to brown add salt and allow them to “sweat”. Sir and continue cooking for another 2 minutes.
  2. When all the mushrooms are finished, add the butter to the pan.
  3. Once butter has melted and began to bubble, and all the mushrooms are coated, add in thyme, heavy cream, and tamari. Bring the sauce to a low simmer stir constantly. Cook until sauce has thickened, about 3-4 minutes. Serve warm over anything and everything.
