A delicious creamy, cheesy, protein-packed quiche without the crust. Crispy bacon, cheddar cheese, eggs, and a little cream come together into a soft, savory quiche that’s perfect for breakfast, brunch, or an easy dinner.

Serves 6–8
- 8 large eggs
- 6–8 slices bacon, cooked and crumbled
- 1 cup shredded sharp cheddar cheese
- ½ cup mozzarella cheese
- ½ cup heavy cream
- ½ cup whole milk
- ¼ cup finely chopped onion
- 2 tbsp chopped green onions or chives
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika
- ¼ tsp black pepper
- ¼ tsp salt
- 1 tbsp butter or cooking spray, for the pan
Optional:
- ½ cup sautéed mushrooms
- ½ cup chopped spinach
- ½ cup diced bell pepper
- ¼ cup Parmesan cheese
- Pinch of red pepper flakes
👩🍳 Step-by-Step Instructions
1. Cook the bacon
Cook the bacon in a skillet over medium heat until golden and crispy.
Transfer it to a paper-towel-lined plate and let it cool slightly.
Crumble or chop the bacon into small pieces.
Tip: Don’t leave the bacon soft—it tastes much better in the quiche when it’s properly crisp.
2. Sauté the onion
Remove most of the excess bacon grease from the skillet.
