Ingredients

For the Chickpea Cakes
2 (15 oz) cans chickpeas, drained and rinsed
2 large eggs
½ cup oat flour
¼ cup almond flour
¼ cup finely chopped fresh parsley
3 garlic cloves, minced
2 green onions, finely sliced
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tsp ground turmeric
1 tsp smoked paprika
½ tsp ground cumin
½ tsp onion powder
½ tsp sea salt
¼ tsp black pepper
1 tbsp extra virgin olive oil (for the mixture)

For Cooking
2 tbsp extra virgin olive oil
Sticky Lemon Garlic Glaze
2 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
1 tbsp raw honey (or maple syrup for vegan)
2 garlic cloves, finely minced
½ tsp Dijon mustard
½ tsp crushed red pepper flakes (optional)
Pinch of sea salt
1 tsp chopped parsley
Garnish
Fresh parsley
Lemon wedges
Fresh cracked black pepper

Instructions

  1. Prepare the Chickpeas

Pat the chickpeas dry with paper towels. Add them to a large bowl and mash with a potato masher until mostly broken down, leaving some whole chickpeas for texture.

  1. Mix the Batter

Add eggs, oat flour, almond flour, parsley, garlic, green onions, lemon zest, lemon juice, turmeric, smoked paprika, cumin, onion powder, salt, pepper, and olive oil.

Mix until everything is evenly combined.

  1. Rest

Let the mixture rest for about 10 minutes so the flours absorb moisture.

  1. Form the Cakes

Divide into 5 equal portions and shape into thick patties about 1 inch thick.

  1. Pan-Fry

Heat olive oil in a large nonstick skillet over medium heat.

Cook each cake for 4–5 minutes per side until deeply golden brown with a crispy crust, just like the picture.

  1. Make the Sticky Lemon Garlic Glaze

While the cakes cook, whisk together:

Lemon juice
Olive oil
Honey
Garlic
Dijon mustard
Red pepper flakes
Salt
Parsley

Warm gently in a small saucepan for 1–2 minutes until slightly thickened.

  1. Glaze

Brush or spoon the warm sticky lemon garlic glaze generously over each hot chickpea cake, allowing it to caramelize slightly.

  1. Serve

Arrange the cakes on a wooden serving board with lemon wedges, fresh parsley, and extra cracked black pepper for the same fresh presentation as the picture.
