🧄 Air Fryer Garlic Parmesan Chicken Meatloaves

Ingredients:

  • 1 lb ground chicken
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (or almond flour for low-carb)
  • 1 egg (binder)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Optional garnish: chopped parsley, drizzle of olive oil or lemon juice

Instructions:

  1. Preheat Air Fryer to 375°F (190°C).
  2. Mix Ingredients
    In a bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, and seasonings. Mix gently until just combined—don’t overwork the meat.
  3. Form Meatloaves
    Shape into 4–6 equal-sized mini loaves or patties. Spray or brush lightly with olive oil for crispiness.
  4. Cook in Air Fryer
    Place in the air fryer basket in a single layer (cook in batches if needed). Air fry for 15–18 minutes, flipping halfway, until golden and internal temp reaches 165°F (74°C).
  5. Serve
    Let rest 2 minutes, then garnish with fresh parsley or extra cheese if desired.

Low-Carb Swap:

Replace breadcrumbs with:

  • ½ cup almond flour (low-carb + gluten-free), or
  • ¼ cup crushed pork rinds for ultra-low carb
