Ingredients:
- 1 lb ground chicken
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (or almond flour for low-carb)
- 1 egg (binder)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Optional garnish: chopped parsley, drizzle of olive oil or lemon juice
Instructions:
- Preheat Air Fryer to 375°F (190°C).
- Mix Ingredients
In a bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, and seasonings. Mix gently until just combined—don’t overwork the meat. - Form Meatloaves
Shape into 4–6 equal-sized mini loaves or patties. Spray or brush lightly with olive oil for crispiness. - Cook in Air Fryer
Place in the air fryer basket in a single layer (cook in batches if needed). Air fry for 15–18 minutes, flipping halfway, until golden and internal temp reaches 165°F (74°C). - Serve
Let rest 2 minutes, then garnish with fresh parsley or extra cheese if desired.
