Air Fryer Cornbread Muffins

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (optional)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup melted butter or vegetable oil

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, combine the cornmeal, flour, sugar (if using), baking powder, and salt.
    • In a separate bowl, whisk together the buttermilk, melted butter (or oil), and egg.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  2. Preheat the Air Fryer:
    • Preheat your air fryer to 320°F (160°C) for 3-5 minutes.
  3. Prepare the Muffin Cups:
    • Lightly grease silicone muffin cups or use paper liners. If using paper liners, lightly spray them with cooking spray to prevent sticking.
    • Fill each muffin cup about 2/3 full with the batter.
  4. Air Fry the Muffins:
    • Carefully place the muffin cups into the air fryer basket in a single layer, making sure they don’t touch.
    • Air fry at 320°F (160°C) for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    • If your air fryer is smaller, you may need to cook the muffins in batches.
  5. Cool and Serve:
    • Once done, remove the muffins from the air fryer and allow them to cool in the muffin cups for a few minutes before transferring them to a wire rack to cool completely.
