Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar (optional)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup melted butter or vegetable oil
- 1 large egg
Instructions:
- Prepare the Batter:
- In a large mixing bowl, combine the cornmeal, flour, sugar (if using), baking powder, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter (or oil), and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Preheat the Air Fryer:
- Preheat your air fryer to 320°F (160°C) for 3-5 minutes.
- Prepare the Muffin Cups:
- Lightly grease silicone muffin cups or use paper liners. If using paper liners, lightly spray them with cooking spray to prevent sticking.
- Fill each muffin cup about 2/3 full with the batter.
- Air Fry the Muffins:
- Carefully place the muffin cups into the air fryer basket in a single layer, making sure they don’t touch.
- Air fry at 320°F (160°C) for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- If your air fryer is smaller, you may need to cook the muffins in batches.
- Cool and Serve:
- Once done, remove the muffins from the air fryer and allow them to cool in the muffin cups for a few minutes before transferring them to a wire rack to cool completely.
