Air Fryer Apricot Chicken with Roasted Vegetables

Ingredients:
- 8 chicken drumsticks
- 4 medium potatoes, peeled and cut into chunks
- 1 cup baby carrots
- 4 mushrooms, sliced
- 1 packet French onion soup mix
- 2 cups baby spinach leaves
- Steamed greens (such as broccoli or green beans), for serving
- 1 cup dried apricots, halved if desired
Instructions:
- Prepare the Chicken and Potatoes:
- In a large mixing bowl, combine the chicken drumsticks, potato chunks, baby carrots, and sliced mushrooms.
- Season with French Onion Soup Mix:
- Sprinkle the French onion soup mix evenly over the chicken and vegetable mixture. Toss to ensure everything is coated evenly with the mix.
- Preheat the Air Fryer:
- Preheat your air fryer to 380°F (193°C).
- Air Fry the Chicken and Potatoes:
- Place the seasoned chicken and vegetables in the air fryer basket in a single layer. You may need to cook in batches if your air fryer is small.
- Cook for 20-25 minutes, or until the chicken is cooked through and the potatoes are crispy and golden. Shake or toss the ingredients halfway through to ensure even cooking.
- Add Apricots:
- In the last 5 minutes of cooking, add the dried apricots to the air fryer. This will allow them to warm and slightly caramelize.
