Ingredients
Chicken
- 2 boneless, skinless chicken breasts or thighs
- 1½ tbsp extra-virgin olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp paprika
- ½ tsp dried thyme
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp lemon juice
- 1 tsp lemon zest
Broccoli
- 2 cups broccoli florets
- 1 tsp olive oil
- Pinch of salt
- Pinch of black pepper
Mediterranean Creamy Sauce
- ½ cup heavy cream
- ¼ cup freshly grated Parmesan
- 2 tbsp crumbled feta
- 1 garlic clove, minced
- ½ tsp oregano
- ¼ tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp chicken broth or water, as needed
Mediterranean toppings
- 6–8 Kalamata olives, sliced
- 2 tbsp chopped fresh parsley
- 1 tbsp fresh dill
- 1–2 tbsp diced sun-dried tomatoes, optional
- Red chili flakes, optional
Instructions
1. Marinate the chicken
Place chicken in a bowl. Add olive oil, garlic, oregano, paprika, thyme, black pepper, salt, lemon juice, and lemon zest.
Coat well and let it sit for 10–15 minutes.
2. Cook the chicken
Heat a large skillet over medium heat. Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness.
Cook until the internal temperature reaches 74°C / 165°F.
Remove the chicken and let it rest for 5 minutes before slicing.
3. Cook the broccoli
Add 1 tsp olive oil to the skillet. Add broccoli and season with salt and pepper.
Cook for 4–6 minutes, stirring occasionally, until bright green and tender-crisp.
Remove and set aside.
4. Make the Mediterranean cream sauce
Reduce the heat to medium-low.
Add the minced garlic and cook for about 30 seconds.
Pour in the heavy cream and chicken broth. Add oregano and black pepper.
Simmer gently for 2–3 minutes.
Add Parmesan and stir until melted and creamy.
Turn the heat to low and stir in the feta and lemon juice.
If the sauce is too thick, add a tablespoon of broth or water.
5. Add the chicken
Slice the cooked chicken and return it to the skillet.
Coat it gently with the creamy Mediterranean sauce and warm for 1–2 minutes.
6. Assemble
Place the broccoli in bowls and top with the creamy garlic chicken.
Finish with Kalamata olives, fresh parsley, dill, and a little chili flake.
