🍴 Instructions

1. Prepare the Sweet Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper.
  3. In a bowl, toss the sweet potato rounds with olive oil, smoked paprika, cumin, oregano, garlic powder, salt, and pepper.
  4. Spread the slices evenly on the prepared baking sheet — make sure they don’t overlap for even roasting.

2. Roast

  1. Roast for 25–30 minutes, flipping halfway through, until the sweet potatoes are tender inside and golden brown on the edges.

3. Assemble the Mediterranean Layers

  1. Transfer the roasted rounds onto a serving platter.
  2. Sprinkle crumbled feta evenly over the top while still slightly warm.
  3. Scatter the dried cranberries (or sun-dried tomatoes) and jalapeño slices over the feta.
  4. Add a generous handful of chopped parsley or cilantro.
  5. If using, sprinkle toasted sesame seeds for extra crunch and flavor.

4. Finish with a Drizzle

  1. Drizzle a little extra virgin olive oil over everything.
  2. Squeeze lime or lemon juice to add brightness.
  3. Season with an extra pinch of salt and pepper if needed.
