Vegan Cream Cheese Avocado Bites

Ingredients:

For The Vegan Cream Cheese Avocado Filling:

  • 2 8-ounce packages vegan cream cheese, softened
  • 3 ripe avocados, diced small
  • 1 cup vegan bacon bits (store-bought or homemade)
  • 1 cup vegan shredded cheddar cheese
  • 1 cup vegan shredded pepper jack cheese
  • 1/2 cup diced pickled jalapenos
  • 1/2 cup sliced green onions
  • 1/2 cup chopped cilantro
  • 1/4 cup diced red onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon lime juice

For The Coating:

  • 1 cup plant-based milk (such as almond milk or soy milk)
  • 1 tablespoon ground flaxseed (or flaxseed meal)
  • 1 cup all-purpose flour
  • 1-2 cups vegan breadcrumbs (Panko or homemade)
  • 2+ cups vegetable oil for frying

Instructions:

  1. Start by preparing the vegan bacon bits according to the package instructions or your preferred homemade recipe. Once cooked, set aside to cool.
  2. In a large bowl, beat the softened vegan cream cheese until smooth. Then add the cooled vegan bacon bits, vegan shredded cheeses, pickled jalapenos, green onions, cilantro, red onions, garlic powder, Cajun seasoning, black pepper, and lime juice. Mix everything well. Finally, gently fold in the diced avocados. Chill this mixture in the refrigerator for at least an hour.
  3. Prepare the coating by whisking together the plant-based milk and ground flaxseed in a bowl. In separate bowls, place the all-purpose flour and the vegan breadcrumbs.
  4. Take a tablespoon of the chilled avocado filling mixture and shape it into a ball using your hands. Roll the ball in the flour to coat it evenly, then dip it into the plant-based milk and flaxseed mixture, and finally coat it with the breadcrumbs. Place each coated bite on a baking sheet.
  5. To help maintain their shape during frying, freeze these coated bites for approximately an hour.
  6. Heat vegetable oil in a pan over medium-high heat. Fry the coated bites in batches until they become golden brown, which should take around 2-3 minutes per batch. Make sure to flip them halfway through frying for even cooking. After frying each batch of bites, thoroughly drain them on paper towels to remove any excess oil.
