Vegan Southern Cowboy Bean Bake
Ingredients:
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (15 oz) of kidney beans, drained and rinsed
- 1 can (15 oz) of pinto beans, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of corn kernels (fresh or frozen)
- 1 can (15 oz) of diced tomatoes
- 1/4 cup of tomato paste
- 1/4 cup of maple syrup
- 2 tablespoons of soy sauce
- 1 tablespoon of chili powder
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- Optional toppings: chopped fresh cilantro, diced avocado, vegan cheese shreds
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, sauté the diced onion, minced garlic, and diced bell pepper over medium heat until softened, about 5-7 minutes.
- Add the drained and rinsed black beans, kidney beans, and pinto beans to the skillet. Stir well to combine.
- Stir in the corn kernels, diced tomatoes, tomato paste, maple syrup, soy sauce, chili powder, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Transfer the bean mixture to a 9×13 inch baking dish, spreading it out evenly.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until heated through.
- Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
- Once done, remove from the oven and let it cool slightly before serving.
- Serve hot, topped with optional toppings like chopped fresh cilantro, diced avocado, or vegan cheese shreds.
