Ingredients:

  • 1 pint cherry tomatoes, halved
  • 30 oz pinto beans (2-15 oz cans, rinsed and drained; or 3 cups home-cooked)
  • 15 oz black beans (1 can, rinsed and drained; or 1.5 cups home-cooked)
  • 15 oz corn (1 can, rinsed and drained)

For the Easy Ranch Dressing:

  • 1/2 cup 0% Greek yogurt (rounded)
  • 1 tsp garlic powder (rounded)
  • 1 tsp onion powder (rounded)
  • 1 tsp mineral salt (rounded)
  • 1 tsp black pepper (rounded)
  • 2 tsp parsley flakes

Instructions:

  1. Cook the Meat: In a large skillet, brown the ground turkey breast over medium-high heat until fully cooked. Drain any excess liquid.
