Zero-Point Garlic Shrimp Pasta
Ingredients:
- 1 lb medium shrimp, deveined and tails removed
- 1 package shirataki or whole-grain spaghetti noodles (more or less, depending on family size)
- 6-8 garlic cloves, minced (adjust to taste)
- 1/4 cup vegetable broth (or chicken broth)
- Olive oil spray (light spray for cooking)
- Italian seasoning (to taste)
- Fresh ground black pepper (to taste)

Instructions:
- Prepare the Pasta: Boil shirataki or whole-grain pasta in water according to package instructions until tender. Add a pinch of salt and fresh herbs to the boiling water. Save 1/2 cup of pasta water for later. Drain the pasta and set it aside.

- Add Broth: Pour in 1/4 cup of vegetable or chicken broth. Continue to cook for 5-7 minutes, allowing the flavors to meld.
- Combine with Pasta: Add the cooked pasta to the skillet. Season with Italian seasoning, ground pepper, red pepper flakes, and additional salt if needed. Gradually add the saved pasta water (starting with 1/4 cup) until the pasta is evenly coated and moist but not overly wet.
- Toss and Heat: Toss all ingredients together until everything is well-incorporated and heated through.
