WW STUFFED PEPPER SOUP
Ingredients:
- 1 lb lean ground turkey or lean ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) tomato sauce
- 4 cups reduced-sodium beef broth
- 1 cup cooked brown rice
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Optional toppings: shredded low-fat cheese, chopped fresh parsley
Instructions:
- In a large soup pot, brown the ground turkey or beef over medium-high heat, breaking it up into small pieces as it cooks. Drain any excess fat.
- Add the chopped onions, green bell pepper, red bell pepper, and minced garlic to the pot. Sauté for a few minutes until the vegetables begin to soften.
- Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, dried basil, and dried oregano. Bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the peppers are tender.
- Stir in the cooked brown rice and simmer for an additional 5 minutes to heat through.
- Season the soup with salt and pepper to taste. Adjust the seasonings as needed.
