WW STUFFED PEPPER SOUP

Ingredients:

  • 1 lb lean ground turkey or lean ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 4 cups reduced-sodium beef broth
  • 1 cup cooked brown rice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: shredded low-fat cheese, chopped fresh parsley

Instructions:

  1. In a large soup pot, brown the ground turkey or beef over medium-high heat, breaking it up into small pieces as it cooks. Drain any excess fat.
  2. Add the chopped onions, green bell pepper, red bell pepper, and minced garlic to the pot. Sauté for a few minutes until the vegetables begin to soften.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, dried basil, and dried oregano. Bring the mixture to a simmer.
  4. Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the peppers are tender.
  5. Stir in the cooked brown rice and simmer for an additional 5 minutes to heat through.
  6. Season the soup with salt and pepper to taste. Adjust the seasonings as needed.
