WW STEAK FAJITAS
Ingredients:
- 8 oz (or your preferred portion size) lean steak (e.g., sirloin or flank steak)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 tsp olive oil
- Fajita seasoning mix (look for one with low or no added sugar)
- Whole wheat tortillas (check the SmartPoints value)
- Optional toppings: salsa, low-fat sour cream, lettuce, and shredded reduced-fat cheese
Instructions:
- Slice the steak into thin strips and season with the fajita seasoning mix according to the package instructions. The seasoning mix should have minimal SmartPoints.
- Heat a non-stick skillet or griddle over medium-high heat. Add the olive oil and cook the sliced steak until it reaches your preferred level of doneness. Remove the steak from the skillet and set it aside.
- In the same skillet, add the sliced bell peppers and onions. Sauté until they become tender and slightly caramelized.
- Warm the whole wheat tortillas according to the package instructions.
- Assemble your fajitas by placing some of the cooked steak and sautéed vegetables inside each tortilla. Add optional toppings as desired, but be mindful of SmartPoints values.
- Roll up the tortillas and serve your WW-friendly steak fajitas.
